Mushroom Cream Sauce

Mushroom Cream Sauce 

Ingredients:

1 oz dried mushrooms (such as porcini or shiitake)

1 cup heavy cream

2 tbsp butter

1 shallot, finely chopped

2 cloves garlic, minced

1/2 cup chicken or vegetable broth

1/4 cup grated Parmesan cheese

Salt and pepper to taste

Instructions:

1. Rehydrate dried mushrooms by soaking them in warm water for 20 minutes. Drain and chop.

2. In a saucepan, melt butter over medium heat. Add shallot and garlic, cook until softened.

3. Stir in rehydrated mushrooms and cook for a few minutes.

4. Add broth and simmer until reduced by half.

5. Stir in heavy cream and Parmesan cheese, cook until sauce thickens.

6. Season with salt and pepper.
