Rice Noodle Soup with Mushrooms

Rice Noodle Soup with Mushrooms 

Ingredients:

2 oz dried Mushrooms

2 cups water

2 tbsp soy sauce

1 tbsp sesame oil

2 cloves garlic, minced

1-inch piece ginger, grated

4 oz rice noodles

1 cup baby spinach leaves

2 green onions, sliced

Fresh cilantro for garnish

Instructions:

1. Rehydrate dried mushrooms by soaking them in warm water for 20 minutes. Drain and save the broth then chop the mushrooms.

2. In a large pot, heat sesame oil over medium heat. Add garlic and ginger, cook until fragrant.

3. Add broth, water, soy sauce, rehydrated mushrooms, Bring to a boil.

4. Add rice noodles and cook until tender, about 5 minutes.

5. Stir in spinach and cook until wilted.

6. Ladle soup into bowls and garnish with green onions and cilantro.
